
Laksa Malaysia
Laksa is a beloved noodle dish found across Malaysia with each state boasting its own localized version on the dish, utilizing different noodles, proteins, and aromatic herbs. To commemorate Malaysia's National Day on 31st August, we’ll be preparing four popular Malaysian-style laksas or of the Meetup lunch on August 29th. 1. Assam Laksa (Penang) This unique spicy and sour and savoury fish noodle dish is infused with tamarind juice, aromatic torch ginger flower (bunga kantan), laksa leaves (daun kesum) and dried tamarind slices (assam keping) for that extra tartness. Thick laksa rice noodles are served in the broth and topped with shredded fish, cucumber strips, pineapple, onion, red chili, mint leaves, and a spoonful of fermented shrimp paste (hae ko) for depth and umami. 2. Nonya Laksa / Laksa Lemak (Melaka/Penang) Nyonya laksa (or laksa lemak) is a rich, Peranakan noodle soup that features a vibrant, creamy, coconut-based broth. It is heavily seasoned with a fragrant spice paste (rempah) made from dried shrimp, galangal, lemongrass, and turmeric. Toppings typically include prawns, fish cakes, tofu puffs, bean sprouts, and fresh laksa leaves. 3. Sarawak Laksa (Sarawak) Anthony Bourdain famously declared Sarawak Laksa as the “Breakfast of the Gods”. This fragrant, mildly spicy noodle soup dish is packed with flavors from the rich curry-like broth, shredded chicken, poached prawns, and egg omelette strips, bean sprouts, and a squeeze of calamansi (limau kasturi) served with rice vermicelli. 4. Siamese Laksa (Northern states) Siamese Laksa is a midly spicy fish and coconut-based rice noodle soup. This unique laksa has all the sour and fishy deliciousness and many of the garnishings of Asam laksa combined with enriched spices and creaminess of laksa lemak all at the same time.
