Join us for a guest chef demonstration, featuring Gráinne

Mullins, founder and owner of Grá Chocolates.

Chef Gráinne will be demonstrating The Handmade

Gingerbread Chocolate Bauble, including mould prep, temper control,

other handmade techniques and step-by-step assembly. The session

will focus on how to use chocolate as a vessel to balance earthy

spice, sweetness and texture, pairing milk chocolate infused with

ginger alongside a crisp gingerbread crumb, as well as the science of balancing intensity and

sweetness so that every profile appeals to all palates, including

non-chocolate lovers.

Throughout the session, Gráinne will discuss how

Irish heritage, culture and personal narrative are woven into the

design and taste of every creation and the Grá

difference: why ingredient integrity matters-working

exclusively with palm-oil-free, B Corp Valrhona chocolate and local

Irish produce.

About Gráinne Mullins:

Growing up in Galway, Gráinne Mullins developed an early passion

for food and pastry, beginning her career in the kitchens of

five-star hotels as a teenager. Driven by ambition to master

classic techniques at the highest level, she moved to France, for

two years in a Michelin-starred restaurant.

Upon returning to Ireland, Gráinne refined her pastry craft in some

of the country’s most prestigious Michelin-starred establishments.

Her technical mastery, artistic precision, and commitment to local,

seasonal produce led to national acclaim in 2019 when she was named

Euro-Toques Young Chef of the Year-one of the highest honors for

rising culinary talent in Ireland.

In 2020, Gráinne channeled her background in high-end Michelin

kitchens into founding Grá Chocolates. Bringing fine-dining

standards to artisan chocolate, she developed a meticulous four-day

craft process using ethical B Corp Valrhona chocolate, premium

Irish dairy, and hand-painted artistry. What began in her family’s

shed has rapidly expanded into an internationally recognised luxury

brand, with over 50 product lines and a state-of-the-art chocolate

factory and visitor center currently underway in Galway.

Grounded in fine-dining technique and driven by the ethos of Grá

(the Irish word for love), Gráinne brings world-class pastry

craftsmanship and storytelling to every demonstration and

creation.
