Life is sometimes chaotic.

Let’s make sense of it over food.

8:00PM started as a YouTube series. We give space to fringe opinions, the ones forming right now, through conversations that make living in Singapore feel a little less lonely and a little less scary.

Served is that conversation taken offline. We eat, we talk, and the menu shapes where we go.

The evening

A small(ish) group

A curated dinner consisting of Southeast Asian ingredients, paired in ways you’ve rarely tasted

A gently guided conversation designed to fill your soul as we will our stomachs

Come slow down with us. Seats are limited.

Meet Kai (凯味)

Kai is the first chef who said yes to this crazy little concept. He calls his cooking “building an izakaya out of Southeast Asian ingredients.”

Curiosity is what drives him, so we thought it would be a great fit.

Most of us link each ingredient to one dish and never use it any other way. Kai doesn’t. He looks at what an ingredient actually is, then uses technique to push it somewhere new. Slow-baked bangkuang turns sweet. And who says it only belongs in popiah?

We love that he cooks without bias.

To note: We want everyone to enjoy the evening, so if you have any dietary requirements or allergies, please reach out to us before confirming! We’d be happy to talk through the menu and see what we can accommodate. We’ll also be capturing photos and videos during the event. If you’d rather not appear in them, simply let us know on the day!
